INGREDIENTS:
2 oz. Plymouth Gin
0.75 oz. freshly squeezed lemon juice
0.5 oz. simple syrup
0.25 oz. Kubler Absinthe
4 slices of cucumber, muddled
2 oz. soda water
Combine cucumber, lemon juice, simple syrup, gin and absinthe, shake and strain over ice in a Collins glass. Garnish with a twist and a cucumber slice.
Bar manager George Sproule says he was staring at Vegas’ old Huntridge theater and thinking about the need to honor Vegas’ history when he conceptualized this absinthe drink. That and, he adds, absinthe’s tendency to create a mild out-of-body sensation. With absinthe now legalized in Nevada, Sproule sought to create a cocktail that was “an experience.” Absinthe being a liquor notorious for providing experiences (some better than others), here the Green Fairy obliges, its deep botanical flavors in harmony with the drink’s citric base.
