Nite Bite: Palazzo’s new Latin-inspired cocktails stay hot all winter

Just because the pools are closing doesn’t mean you can’t sip like its summer all winter long

Mojitos and Caipirinhas and Pisco Sours, oh my! Margaritas in every flavor and fashion (though we pray not by the yard)!

Consider this fair warning: Vegas will at last be getting a healthy dose of those South American, Latin and tropical cocktails we’ve come to love every Sunday by the pool only now they will be executed to some very exacting standards.

The Palazzo expects to welcome Fusion Bar to the casino floor in about a month, a unique hybrid of a gaming bar and a mixology bar, with real mixologists who really know their Cachaça, rum and tequila.

Who cares if winter is on its way? You can get a lot of drinking done before the pools reopen in March!

And speaking of tequila … Cabo Wabo is said to be making its debut this month with a soft opening on October 26 and a grand opening on Halloween. Shhh, pass it on!
